I’ve made these Green Smoothie Chocolate Chip Muffins three times within the last week. The first round didn’t result in a muffin I was excited to share with you. It was okay, but not great. Truth be told, it tasted healthy…
I hadn’t planned on sharing something sweet this week. I had planned on sharing the recipe for these {oh-so-yummy} Roasted Brussels Spouts Bowl with Poached Eggs. But sometimes plans change. And once I started down memory lane and got this Lemon Blueberry Cheesecake Frozen Yogurt in my head, it felt like the perfect recipe to share before Memorial Day weekend…
Josh and I were just talking the other morning about smells and their ability to bring back memories or suddenly make you think of a time or place you haven’t thought of in years. A quick google search revealed that this is known as “odor-evoked autobiographical memory”…
Until now, I’d only heard of sweet potato toast. It sounded great, but almost too easy. So with both little ones happy and occupied the other morning, I decided to see if it was really as quick and easy as it seemed. And I gotta say, it was!…

Monday may not be my favorite day of the week, but one thing I love about Monday is the fresh start it brings, especially when it comes to eating and making good decisions. I don’t know about you, but the weekends always seem a little more challenging to eat clean…
I’m back! I cannot believe it’s been over a month since my last post! In the last six-seven weeks, we have been to Vermont for our Baby Moon, to Indiana and Michigan to visit family and celebrate my Grandma’s 90th birthday and her and my Grandpa’s 70th {yes, 70TH!!}…
It’s Friday and I am SO very glad! We have entered into our “birthday season” between Josh’s and my family, and this weekend we will be celebrating my mom’s birthday. I can only imagine there will be both laughter and tears, and while the weekend will look different from the past, I’m so very grateful to have such a wonderful family, who will make the very most of the day and our time together…
This posts is short and sweet – Josh and I are doing our best to get to bed early so we can get up at 3:30AM and make our way to the airport. We are going to Vermont for the weekend to celebrate his 30th birthday {which isn’t actually until November} and I am so very, very excited…
Warning: picture heavy post! Before I dive in to the delights of this Dark Chocolate Chunk Ice Cream with Cayenne, let’s talk men and gifts. How many times as you asked yourself “what should I get him”? And “him” can be your boyfriend/husband, dad, brother, or friend. It seems to be the ever asked, yet rarely answered, question…
I definitely feel like I’ve been a bit MIA around these parts lately, but hopefully that will soon change. Two things are finally official… we have moved the very last of our items out of the house {who knew we had so much STUFF?!}, and as of 10am yesterday morning, we closed on the house and it is once-and-for-all SOLD. Praise the Lord! As much work as this transition has been, we are so thankful to have sold the house and walked away financially in a better place, it is truly a blessing! While we have no idea what the next chapter of our lives holds, we are anticipating it with hopeful expectations…
Doesn’t ice cream on a Friday just seem appropriate? By the end of the work week, I think we all deserve a little ice cream, especially if we’re talking about this Avocado Mint Chocolate Chip Ice Cream! This ice cream is an adaption of my Banana Ice Cream with Peanuts, which is a tasty, yet healthy little treat I make for us from time to time. It’s not exactly low-calorie, low sugar, but it IS all natural and refined sugar-free, while containing no additives or preservatives like so many store-bought ice creams. Which makes it justifiable as healthy to me!…
Happy Tuesday! I don’t know about you, but I’m glad this particular Monday is over! We had a power outage due to storms that lasted over an hour and a half, then it was practically a monsoon the rest of the day. BUT, thankfully we {and our loved ones} survived the storms, and for that, I am truly grateful!…
I’m sorry… does that say chili pepper? On my chocolate muffin? Really?
Trust me. It sounds a bit odd, but it works! And it’s good! I don’t know if the whole cayenne, chili pepper, spicy-kick thing mixed with chocolate is new or just becoming more common, but suddenly I see the pairing in ice cream, truffles, chocolate bars and now these Fudgy Flourless Chocolate Chili Muffins!…

Who knew that bananas, when frozen, could be turned into a creamy-sweet-delicious dessert that closely mimics ice cream?
I discovered this about a year ago and since then keep a large stock of bananas in my freezer. Not only are they perfect to grab for a quick ice cream fix, but they’re also great to thicken up smoothies, while sweetening them naturally!…
Happy Valentine’s Day!
This week has flown by! I think being sick does that to you, time disappears and consequently, I feel behind on just about everything! I came down with some sort of awful sinus congestion/head cold thing last Saturday and it got progressively worse until I found myself curled up in bed Monday evening with a pounding headache…
Granola is one of those things that makes a yummy snack without the guilt of eating a handful… or sometimes several handfuls.
And as much as I love granola, I made this recipe more for Josh, than myself. Mornings are often my time to get up early, grab my coffee and fix my greek yogurt with whole oats, flax and berries before curling up on one of our front porch chairs (with Tucker of course) to eat breakfast and read my devotion, catch up on personal emails, look at food blogs, etc. I’ve come to cherish this time as I consider it my “me time”…
