Seven Vegetarian Recipes for Cinco de Mayo!
The sun is shining, the weather is warm and I think {fingers-crossed} Spring is FINALLY here to stay! And with the warm weather comes the joy of eating outside!..
Well, the sun shown most of the day and from the inside it looks like Spring outside, but the temperatures are still pretty cool and there was a light layer of snow on the ground this morning! I guess that’s somewhat to be expected for our area this time of year. Warm one day, cold the next…

My family lived in New Mexico from the time I was just over a year old until I was ten when we moved to Murfreesboro, a suburb outside of Nashville, Tennessee. I grew up eating lots of Mexican inspired dishes – fajitas, tacos, quesadillas, taco salad, bean burritos, etc…
As promised, today’s recipe combines a version of last week’s Mediterranean Roasted Red Potatoes and Veggies with many of my other favorites to make this Roasted Veggie Grain Bowl with Avocado and Hummus…
For those of you who follow me on Instagram, you may already know that our little Adelaide has arrived! She was born Saturday, September 9th at 11:19pm and is just a little over a week and a half old. She is beautiful and perfect and our hearts are so full…
We eat a lot of eggs in our household. A lot. And this pregnancy, I’ve seemed to crave them more than ever. I’ve been a yogurt with berries, flaxseed, and bran flakes breakfast-eater for years, but for whatever reason, it just hasn’t set well with me the last nine months…
I think we can all agree that Spring and Fall are two truly lovely seasons. I have friends who tend to hate summer or winter, but living in Tennessee, we have the luxury of experiencing all four season and I find I look forward to and love each and every one…

So many things I want to share in this post, including an update on our week in Disney World. This place is like it’s own little city – and these trackers Magic Bands… part genius/amazing, and part creepy! I can’t say Disney would be my choice of places to vacation, but it’s been a wonderful week and I’ve enjoyed a lot of rest and down time while Josh worked the Experience Conference {why we’re here!}, and after Saturday, we can officially say we’ve done the Disney Experience…
You may not have realized I’ve been a bit MIA, but I HAVE and I’ve missed you! For the first time since I started blogging a year ago, I not only didn’t post twice last week, I didn’t even post once! The decision didn’t come easy, but the time simply wasn’t there. The realization finally set in that I can’t do everything I want to do, and that’s okay. I have to prioritize and make choices. Part of being an adult, right?!…
That’s right… I’ve officially jumped on the Roasted Chickpeas bandwagon, but who can blame me!? In my defense, I literally eat chickpeas in my salad every single day of the work-week. I buy at least one can of Trader Joe’s organic chickpeas/garbanzo beans every week if not more. So it was only natural that I try roasting these versatile, fiber-rich little legumes. For me, salads are all about texture and who could resist adding these Savory Spiced Roasted Chickpeas for a perfect crunch?? No more nutrient-lacking croutons!…
I knew I loved all things sweets and salads {come to think of it, that might have been a better name for my blog…off subject}, but I didn’t realize I loved pizza quite so much. Being that this Cauliflower Alfredo Veggie Pizza is my fifth pizza post in the short time I’ve been blogging, it’s becoming pretty clear that I adore pizza in all varieties…
Birthday Season.
Does anyone else have one of those in your family? You know, that month or two during the year where the birthdays are just stacked on top of each other? Or were my parents, grandparents, parents-in-law, and grandparents-in-law the only ones who seemed to all get together and decide what the best time of the year was to have a baby? Surely some of you can relate…

I’ve never really been much of a fan. Red meat, in general, isn’t something I crave or have to have. I do eat it occasionally, and even have a fabulous Grass Fed/No Hormones/No Antibiotics Beef Supplier, my father-in-law!…
Has patty pan squash been this popular for a while and I’m just late to the party? Recently I seem to see it everywhere, including our CSA! There is a fairly new farmers market in Nashville, so on a Tuesday evening, a few weeks back, a co-worker and I walked to it after work, to check out the local vendors and see what it was all about. I had already gotten my produce that week so it was more browsing than buying, but I wanted to get something I hadn’t used or bought before and decided to go with a couple patty pan squash since I wasn’t familiar with it. It is a round, sorta scalloped squash that is similar to zucchini and seems to be very versatile. I created a Stuffed Patty Pan Squash with that purchase, but this time decided to go with a different approach…
Who knew cauliflower was so versatile? From cauliflower pizza crust to cauliflower Alfredo sauce to cauliflower steak, the options seem to be endless! I first came across a low carb cauliflower pizza crust similar to this one a few years ago when looking for a healthier pizza option. I’ve made it several times over the years and Josh and I both really like it…
There is absolutely nothing new, great or overly creative about these Easy Breakfast Burritos. But not all meals need to be new, great, or overly creative, right? Sometimes meals just need to be a little hearty, a little comforting, and a lot of tasty. And that is what these burritos are and do. Not to mention they are made with ingredients I keep on hang regularly and create a dish that comes together quickly…
I’ve always been a bit intimidated by eggplant. There’s really no reason for this intimidation, it’s just there. My first experience with it was years ago when my sister Jana was nine months pregnant and ready for my little niece to make her appearance. In our efforts to see if there was something she could do or eat to help move the labor along, we read about eggplant parmesan, and the suggestion that it could help induce labor. So we thought, why not? Sounded better than drinking castor oil…
