Summer Squash and Farro Veggie Bowl

You may not have realized I’ve been a bit MIA, but I HAVE and I’ve missed you! For the first time since I started blogging a year ago, I not only didn’t post twice last week, I didn’t even post once! The decision didn’t come easy, but the time simply wasn’t there. The realization finally set in that I can’t do everything I want to do, and that’s okay. I have to prioritize and make choices. Part of being an adult, right?!…

Vegetarian Zucchini White Bean Burgers

I think if you would’ve asked me a couple of years ago if I liked zucchini I would have easily shrugged with a quick “of course, who doesn’t?” However when I look back at my recent recipes, it’s becoming apparent that I’m a little more than just fond of zucchini! Who knew zucchini was so versatile?…

Chickpea Apple and Avocado Salad + Picnic / Hike

After church on Sunday, Josh and I quickly ran home, changed clothes, packed up some lunch and snacks and made our way to Percy Warner Park for a hike! I don’t know about you, but being outside and getting some exercise helps clear my mind and heal my soul. The trail through Percy Warner is not especially beautiful, being that it does not run along a creek, there is no bluff with a beautiful view, nor a glorious waterfall at the end…

Blueberry Pecan Balsamic Vinaigrette

This Blueberry Pecan Balsamic Vinaigrette is another quick, simple recipe. After the overwhelming response I received to these Southwest Sweet Potato Lettuce Wraps, in light of my initial hesitations and concerns that it wasn’t “good enough”, I now humbly realize that people like simple. Especially when simple can also be healthy!…

Zucchini Fritters with Poached Eggs

Disclaimer: I was so enchanted by these Zucchini Fritters with Poached Eggs, I’m afraid they’ve demanded somewhat of a picture-happy post, so be prepared! But who could blame me?? I mean, zucchini combined with red peppers, sweet onions, flax seed, cashew meal, and feta, baked to a crispy perfection, then topped with honey lime chipotle sauce and a poached egg with its glorious runny yolk…

Spiced Sweet Potatoes Ultimate Tostada

Happy Cinco de Mayo!

As promised, here is the full recipe for these Spiced Sweet Potatoes {Savory Waffle} Ultimate Tostadas! This is a continuation to Friday’s post, where I shared the recipe for these Gluten Free Savory Cornbread Waffles. I mentioned last week that while we were in Seattle last year we ate at Nero Belgian Waffle Bar {so good}, which largely contributed to the inspired behind these savory waffles. However, the other inspiration came when contemplating an alternative base for a scrumptious tostada outside of the typical corn tortilla…

Green Power Salad with Roasted Veggies + Mom Update

Have you tried the Balsamic Almond and Turmeric Dressing yet?!? If not, here is the perfect Green Power Salad to put with it! If you didn’t get a chance to read my last post, then let me quickly fill you in. I started out making this salad last Sunday, intending on mixing in all my favorites while attempting a new homemade dressing to go with it. However, the dressing took over, stole the show and got a post of its own! So now, as promised, I have the scoop on the salad that left my tummy happy and full, yet wanting more!…

Chilaquiles with Chipotle Adobe Pepper and Avocado

After making these Chilaquiles with Chipotle Adobe Pepper and Avocado, I learned, if you’re looking for a way to track your favorite foods and see what you are naturally drawn to…start a food blog.

I never realized just how much I love Mexican inspired foods, or sweet potatoes, avocados, and chocolate. Okay, maybe I knew the chocolate. But when you see these same ingredients show up post after post you begin to realize you’re (I’M) maybe not as diversified as you’d (I’D) like to think…

BBQ Lentil Meatballs with Feta Cheese

Two for two!

These BBQ Lentil Meatballs are the second vegetarian meatball recipe I’ve made here, and I’m am over-the-moon with the outcome of both! You may remember the Vegetarian Quinoa Meatballs I posted back in November, they were full of fresh herbs, eggplant, parmesan, all ingredients that gave them an immense flavor that paired perfectly with a red sauce pasta sauce…

Roasted and Stuffed Butternut Squash

Birthday Season.

Does anyone else have one of those in your family? You know, that month or two during the year where the birthdays are just stacked on top of each other? Or were my parents, grandparents, parents-in-law, and grandparents-in-law the only ones who seemed to all get together and decide what the best time of the year was to have a baby? Surely some of you can relate…

Beet Veggie Burger

Josh and I went to the Nashville Farmers Market this past Saturday to see what they had to offer in the way of local, all natural produce. We typically get all our groceries from Trader Joe’s, but want to make a better effort to support small farms in our community. We were a bit disappointed to find that there was little available in the way of organically (meaning no pesticides, food additives, genetically modified organisms, etc) grown fruits and vegetables. I realize that to farm this way is more difficult and time-consuming, which then results in typically more expensive goods – all things which present challenges for farmers to make the commitment to farm organically and sustainably. Still I couldn’t help but be surprised by the lack of organically grown options. In fact, more than one vendor/farmer was somewhat put-off when I asked how they grew their vegetables and whether or not they used pesticides…

Baked Patty Pan with Sweet Potato and Kale

Has patty pan squash been this popular for a while and I’m just late to the party? Recently I seem to see it everywhere, including our CSA! There is a fairly new farmers market in Nashville, so on a Tuesday evening, a few weeks back, a co-worker and I walked to it after work, to check out the local vendors and see what it was all about. I had already gotten my produce that week so it was more browsing than buying, but I wanted to get something I hadn’t used or bought before and decided to go with a couple patty pan squash since I wasn’t familiar with it. It is a round, sorta scalloped squash that is similar to zucchini and seems to be very versatile. I created a Stuffed Patty Pan Squash with that purchase, but this time decided to go with a different approach…

Zucchini Pasta with Sweet Potato and Kale

If you are a pasta lover but are trying to reduce the carbs and processed grains, try this Zucchini Pasta dish!

A while back I had been cooking my way through our CSA and when trying to decide what I wanted to create for dinner that night, I remembered the zucchini and summer squash. I decided to throw a few things together for a pasta dish inspired by some of the Julienne Summer vegetable recipes floating around the web. Some of these dishes included a red spaghetti sauce while others use a little olive oil, salt, pepper and garlic and kept it simple…

Veggie Stuffed Patty Pan Squash

Everything about starting a food blog excites me; the food, the pictures, the community, the inspiration of others. The thing that terrifies me is the writing….and the food, the pictures, the opinions of others. Maybe it’s more accurate to say that everything about starting a food blog excites and terrifies me. I see so many extraordinary food blogs and photography online with witty writing and easily question whether or not I can really do this – but when I wake up at 5:30 without an alarm, hungry and thinking about the blog, I know this is something I desperately want to make a go at…
