This Strawberry Burrata Bruschetta with Balsamic Reduction is a sweeter take on the more traditional savory bruschetta. It’s bursting with flavors and textures that complement one another beautifully and will have you coming back for more (and more)!

Bruschetta is one of those appetizers that I rarely think to make… but can’t stop eating once I do…

Sweet Potato Beet and Goat Cheese Galette + Gluten Free

If you even remotely like the earthy flavor of beats, the intense candy-like flavor of sweet potatoes, and the bold, creamy flavor of goat cheese, then this Sweet Potato Beet and Goat Cheese Galette is a must-try for you. And as if that isn’t enticing enough…those intense flavors are then wrapped in a warm, crispy, pastry shell that embodies an herbal garlic and basil flavor, making this a hearty, dare I say comforting Fall dish…

Balsamic Maple Glazed Cauliflower

It’s amazing how quickly life can change. Just when you think you have a plan in place, in the blink of an eye, that plan has been thrown out the window and a new one begins to form. If you’ve followed along for a while, you likely know that Josh and I sold our house and we’re waiting on our rental…

Chickpea Apple and Avocado Salad + Picnic / Hike

After church on Sunday, Josh and I quickly ran home, changed clothes, packed up some lunch and snacks and made our way to Percy Warner Park for a hike! I don’t know about you, but being outside and getting some exercise helps clear my mind and heal my soul. The trail through Percy Warner is not especially beautiful, being that it does not run along a creek, there is no bluff with a beautiful view, nor a glorious waterfall at the end…

Vegan Zucchini Sweet Potato Rolls

Okay… here is where I admit that I’m a horrible food blogger who did not properly plan and prepare a festive July 4th recipe to share with you…do I lose any and all credibility I may have built up to this point??? I could pretend that I took the route of sharing a small, healthy appetizer with you for your July 4th bash. I could even say that I opted to use a blue and white linen napkin in the spirit of this great holiday, since the food itself is rather lacking in the department of festive spirit {red, white and blue}. But I’m afraid you’d see right through me!…

Southwest Sweet Potato Lettuce Wraps

I know I sound like a broken record, but it’s no secret that I love sweet potatoes. I’ve also discovered over the last several months that I really love Mexican seasonings and use them in my cooking much more than I realized. Yet, I’ve delayed posting these Southwest Sweet Potato Lettuce Wraps for a couple reasons…

Avocado Deviled Eggs with Smoked Paprika

I am no expert eggs-pert {yes, I just did that… tried to type egg expert and heard the play on words in my head and couldn’t resist!} when it comes to deviled eggs. In fact, before making these lovely little green Avocado Deviled Eggs, I had never actually made them. Gasp, I know! Somehow over the years, when it came to family get-togethers and meals, I typically either volunteered or got volunteered for salad or dessert, and occasionally bread. Probably because {A.} I really love salad and tend to eat a lot of it, and {B.} love sweets and enjoy trying out new and different recipes…

Seven Saint Patrick’s Day Recipes

I simply cannot let March 17th come and go without sharing seven Saint Patrick’s Day recipes that feature an array of greens threaded throughout some of my favorite, albeit experimental recipes. So today, I decided to don my shamrock green in anticipation of the upcoming holiday while hoping the Luck of the Irish comes my way!…

BBQ Lentil Meatballs with Feta Cheese

Two for two!

These BBQ Lentil Meatballs are the second vegetarian meatball recipe I’ve made here, and I’m am over-the-moon with the outcome of both! You may remember the Vegetarian Quinoa Meatballs I posted back in November, they were full of fresh herbs, eggplant, parmesan, all ingredients that gave them an immense flavor that paired perfectly with a red sauce pasta sauce…

Lemon Ginger Asparagus with Toasted Coconut

Before I get to this tasty Lemon Ginger Asparagus topped with Toasted Coconut, let me give you a brief update on what we’ve been up to!

Last week was full of lots of hard work {mostly on Josh’s part!} to make a few changes around the site and I am thrilled with the outcome! Josh has done a wonderful job redesigning the home page to incorporate a few new features, including the slider at the top and a “Popular Posts” column on the right…

Roasted Brussels Sprouts with Acorn Squash and Quinoa

A friend of mine from work recently brought me a beautiful brussels sprout stalk from Trader Joe. Have you seen these? They would be beautiful table centerpieces in a large old wooden trough! He knows I love veggies and picked one up for himself and was thoughtful enough to grab me one, too!…

Whole Wheat Butternut Squash Biscuits

Happy Thanksgiving!
While I absolutely love Christmas, I love that Thanksgiving is less commercialized and allows us to focus a bit more on the things in life that really matter. It’s that time of year when we stop and actually speak aloud the things we are grateful for in our lives.

Not to mention all the wonderful food we typically gorge ourselves with on Thanksgiving!

Before I dive in to these Butternut Squash Biscuits, I wanted to stop and take a minute to share with you 10 things I am grateful for…

Baked Sweet Potato Fries

Today’s post is short and sweet, as in Baked Sweet Potato Fries! These little fries make a regular appearance in our meals. I make these as a side to our dinner or for a quick snack on a regular basis. We don’t typically keep any sort of chips or salty snacky foods in the house other than a variety of dry roasted nuts, not just for healthy reasons but also for budget purposes. We found those sort of snacks add up quick and we’d rather focus our grocery budget on other things! So, when we have a craving for something with a bit of salt, these fries are easy to whip up in about 20 minutes and definitely hit the spot…
