Zucchini Spaghetti with Lentil Marinara

This Zucchini Spaghetti with Lentil Marinara is one of, if not my absolute, favorite ways I’ve eaten zucchini pasta. I very rarely fix traditional pasta for us and it’s been a long time since I’ve had a good ole’ meat sauce spaghetti. It’s not something I crave or pine over at an Italian restaurant…

Roasted BBQ Veggie and Avocado Sandwich

So many things I want to share in this post, including an update on our week in Disney World. This place is like it’s own little city – and these trackers Magic Bands… part genius/amazing, and part creepy! I can’t say Disney would be my choice of places to vacation, but it’s been a wonderful week and I’ve enjoyed a lot of rest and down time while Josh worked the Experience Conference {why we’re here!}, and after Saturday, we can officially say we’ve done the Disney Experience…

A Year of Recipes You Might Have Missed

I mentioned last week that my technical one year anniversary has come and gone and I had absolutely no idea, therefore gave no tribute to it, or reflection on this past year. I say “technical because, while my first post was dated August 19th, I didn’t actual tell anyone about the blog until late October. So, I guess since I missed doing this in August, and it’s not quite yet October, I’ll post this little tribute in September and shoot the middle…

Summer Squash and Farro Veggie Bowl

You may not have realized I’ve been a bit MIA, but I HAVE and I’ve missed you! For the first time since I started blogging a year ago, I not only didn’t post twice last week, I didn’t even post once! The decision didn’t come easy, but the time simply wasn’t there. The realization finally set in that I can’t do everything I want to do, and that’s okay. I have to prioritize and make choices. Part of being an adult, right?!…

Vegetarian Zucchini White Bean Burgers

I think if you would’ve asked me a couple of years ago if I liked zucchini I would have easily shrugged with a quick “of course, who doesn’t?” However when I look back at my recent recipes, it’s becoming apparent that I’m a little more than just fond of zucchini! Who knew zucchini was so versatile?…

Chickpea Apple and Avocado Salad + Picnic / Hike

After church on Sunday, Josh and I quickly ran home, changed clothes, packed up some lunch and snacks and made our way to Percy Warner Park for a hike! I don’t know about you, but being outside and getting some exercise helps clear my mind and heal my soul. The trail through Percy Warner is not especially beautiful, being that it does not run along a creek, there is no bluff with a beautiful view, nor a glorious waterfall at the end…

Kale and Quinoa Veggie Bowl with Soft Boiled Egg

To so many of you, thank you for your prayers for my mom and your kind and encouraging words regarding the blog. There was a time when I didn’t understand what a “blog” was, or why one would write one. But aside from the wealth of information people share through blogs, whether the subject appeals to a wide audience or is tailored to a more unique niche, it’s not only amazing, but also beautiful the way they allow people all over the states and even world, to identify with one another…

Vegetarian Lentil Sloppy Joes + Mom Update

I don’t know whether to talk about these mouth-watering Vegetarian Sloppy Joe Sandwiches first, or about TIME and wanting/needing more of it. More time for me, more time for you, I think it’s safe to say that aside from us all needing a little more love, we need more time!…

Berry and Pecan Spring Mix Salad with Vinaigrette

Happy Memorial Day! I thought I’d be a little patriotic and share this Berry and Pecan Spring Mix Salad loaded with blueberries, raspberries and topped with a bit of goat cheese. Nothing like adding a little red, white and blue to our plates, to help remind us what this day is all about and the gift so many have given us in fighting for our country and our freedom. To those of you serving in our Armed Forces, or have loved ones who serve or have served, thank you from the bottom of my heart for your selflessness, bravery, and sacrifice!…

Blueberry Pecan Balsamic Vinaigrette

This Blueberry Pecan Balsamic Vinaigrette is another quick, simple recipe. After the overwhelming response I received to these Southwest Sweet Potato Lettuce Wraps, in light of my initial hesitations and concerns that it wasn’t “good enough”, I now humbly realize that people like simple. Especially when simple can also be healthy!…

Southwest Sweet Potato Lettuce Wraps

I know I sound like a broken record, but it’s no secret that I love sweet potatoes. I’ve also discovered over the last several months that I really love Mexican seasonings and use them in my cooking much more than I realized. Yet, I’ve delayed posting these Southwest Sweet Potato Lettuce Wraps for a couple reasons…

Zucchini Fritters with Poached Eggs

Disclaimer: I was so enchanted by these Zucchini Fritters with Poached Eggs, I’m afraid they’ve demanded somewhat of a picture-happy post, so be prepared! But who could blame me?? I mean, zucchini combined with red peppers, sweet onions, flax seed, cashew meal, and feta, baked to a crispy perfection, then topped with honey lime chipotle sauce and a poached egg with its glorious runny yolk…

Cauliflower Alfredo Veggie Pizza

I knew I loved all things sweets and salads {come to think of it, that might have been a better name for my blog…off subject}, but I didn’t realize I loved pizza quite so much. Being that this Cauliflower Alfredo Veggie Pizza is my fifth pizza post in the short time I’ve been blogging, it’s becoming pretty clear that I adore pizza in all varieties…

Spiced Sweet Potatoes Ultimate Tostada

Happy Cinco de Mayo!

As promised, here is the full recipe for these Spiced Sweet Potatoes {Savory Waffle} Ultimate Tostadas! This is a continuation to Friday’s post, where I shared the recipe for these Gluten Free Savory Cornbread Waffles. I mentioned last week that while we were in Seattle last year we ate at Nero Belgian Waffle Bar {so good}, which largely contributed to the inspired behind these savory waffles. However, the other inspiration came when contemplating an alternative base for a scrumptious tostada outside of the typical corn tortilla…

Harissa Avocado and Turkey Panini with Homemade Bread

If you are a fan of the classic grilled cheese, but enjoy changing it up a bit, then this Harissa Avocado and Turkey Panini is for you! There is something so comforting about a warm grilled sandwich. Thick slices of your favorite bread toasted to perfection, smoldered with savory flavors and held together with melted, gooey cheese. So good…

Green Power Salad with Roasted Veggies + Mom Update

Have you tried the Balsamic Almond and Turmeric Dressing yet?!? If not, here is the perfect Green Power Salad to put with it! If you didn’t get a chance to read my last post, then let me quickly fill you in. I started out making this salad last Sunday, intending on mixing in all my favorites while attempting a new homemade dressing to go with it. However, the dressing took over, stole the show and got a post of its own! So now, as promised, I have the scoop on the salad that left my tummy happy and full, yet wanting more!…

Balsamic Almond and Turmeric Salad Dressing

This doesn’t look much like a Fudgy Flourless Red Chili Chocolate Muffin, does it? Because that’s the recipe I was planning on sharing with you. However, some times things don’t go as planned.

After church this afternoon I began preparing a recipe, what I’m calling, a Green Powerhouse Salad with Roasted Brussels Sprouts and Sweet Potato. Although now that I see how long that is, I may have to revise it a bit before posting the recipe…

Sweet Potato Pad Thai with Sriracha Sauce

Okay, truth? I’ve never actually eaten Pad Thai. So, I feel like a bit of a phony, or at least a little unqualified, to title this recipe, Sweet Potato Pad Thai. BUT, like the straight-A student I always sought to be, I did do my research. And I think {fingers-crossed} that I have enough of the general ingredients needed to label this Pad Thai…

Seven Saint Patrick’s Day Recipes

I simply cannot let March 17th come and go without sharing seven Saint Patrick’s Day recipes that feature an array of greens threaded throughout some of my favorite, albeit experimental recipes. So today, I decided to don my shamrock green in anticipation of the upcoming holiday while hoping the Luck of the Irish comes my way!…

BBQ Lentil Meatballs with Feta Cheese

Two for two!

These BBQ Lentil Meatballs are the second vegetarian meatball recipe I’ve made here, and I’m am over-the-moon with the outcome of both! You may remember the Vegetarian Quinoa Meatballs I posted back in November, they were full of fresh herbs, eggplant, parmesan, all ingredients that gave them an immense flavor that paired perfectly with a red sauce pasta sauce…

Vegetarian Spaghetti Squash Tacos and My Mom’s Story

I should forewarn you that this is a very long post, but if you have a minute, I’d like to share with you our story and the battle we are facing with my mom’s health.

Let me start by saying that I’ve come to believe we were all created with this deep desire to know people and be known. I believe there is an innate longing in all of us to feel really known by other human beings, and more importantly, to feel loved and accepted for who we are…

Butternut Squash Quesadilla with Chipotle Avocado Sauce

Looking for the perfect meal for tomorrow’s Playoff games? I have just the thing for you!

I don’t know if you have any football fans in your house, or if you’re excited about the remaining teams, but let me just say that the Pauley house is pretty stoked. Josh has been a longtime, loyal 49ers fan. Even during their, shall we say… struggling seasons. So while they’ve had their ups and downs this year, we could not be more excited about tomorrow night’s game and their chance at going to the Superbowl two years in a row!…

Loving Leftovers

Josh and I are back in Nashville, and while New York was absolutely wonderful, I am so thankful to be home. As energizing, adventurous and exciting as traveling is, I’m very much a person of routine, and there is nothing more comforting than to sleep in your own bed and wake up in your own surroundings…

Roasted Acorn Squash and Farro Salad

The weekend has come and gone again, where does the time go??

We spent this past Saturday evening out in Woodbury celebrating my niece’s 8th birthday party. Hard to believe she’s getting so big, so fast! With Halloween just around the corner, my niece requested a bonfire and costume party (I’m afraid I was lame and didn’t dress up). My sister, with help from her husband and in-laws, did a wonderful job setting up the fire pit for roasting hot dogs and s’mores, as well as creating a table loaded with festive treats decorated as ghosts, goblins, eyeballs and more…
