Chocolate Granola with Coconut Palm Sugar

Tonight we had the privilege of watching a free screening of the new movie About Time. I have to say that while I am a huge sucker for a chick-flick, I didn’t have high expectations for this one. And maybe that’s a little harsh to say, I was definitely looking forward to the movie (especially being that it was free) I just hadn’t heard much about it. And really, now that I’ve seen it, chick-flick puts this movie in a box that it doesn’t quite deserve, maybe indie drama would be better suited. Regardless, I am happy to say that I loved it. I laughed, I cried. It brought out so many emotions in me about family, love and life…

Chocolate Covered Pumpkin Breakfast Bars

I love Fall. I love the crisp Autumn mornings, love the smell of drying leaves, love wearing layers and scarves, love the idea of a bonfire with roasted marshmallows and s’mores, love to hike in the mountains and marvel at the changing colors, I could go on and on. And I guess I already have. But needless to say, Fall, much like many others, is my favorite time of the year. Which is why we chose this time of the year to visit Vermont…

Crunchy Granola with Flax and Sunflower Seeds

Oats, pecans, flaxseed, sunflower seeds, shredded coconut, honey, and coconut oil, all baked to golden perfection? Yes please!

I am one of those people who eat the same thing every day for breakfast and never get tired of it. At least not for a very long time. Not to say that I don’t make small changes daily, but overall, it’s the same thing, everyday. And for me, that breakfast is greek yogurt, mixed berries, whole oats, bran flakes, flaxseed (sometimes Hemp or Chia seeds) and cinnamon…

Eggplant, Sausage and Flax Frittata

I think one of my favorites things about my organic CSA…aside from the fact that it is local, organic, in season, flavorful, fresh out of the ground AND affordable, is that I am challenged to make dishes using whatever is in the box that week. I’ve had a lot of eggplant recently, and if you read my post Quinoa and Veggie Stuffed Eggplant then you know that I’m fairly new to cooking and eating Eggplant…

Beet Veggie Burger

Josh and I went to the Nashville Farmers Market this past Saturday to see what they had to offer in the way of local, all natural produce. We typically get all our groceries from Trader Joe’s, but want to make a better effort to support small farms in our community. We were a bit disappointed to find that there was little available in the way of organically (meaning no pesticides, food additives, genetically modified organisms, etc) grown fruits and vegetables. I realize that to farm this way is more difficult and time-consuming, which then results in typically more expensive goods – all things which present challenges for farmers to make the commitment to farm organically and sustainably. Still I couldn’t help but be surprised by the lack of organically grown options. In fact, more than one vendor/farmer was somewhat put-off when I asked how they grew their vegetables and whether or not they used pesticides…

Low Carb Cauliflower Pizza Crust with Sweet Potatoes

Who knew cauliflower was so versatile? From cauliflower pizza crust to cauliflower Alfredo sauce to cauliflower steak, the options seem to be endless! I first came across a low carb cauliflower pizza crust similar to this one a few years ago when looking for a healthier pizza option. I’ve made it several times over the years and Josh and I both really like it…

Quinoa and Veggie Stuffed Eggplant

I’ve always been a bit intimidated by eggplant. There’s really no reason for this intimidation, it’s just there. My first experience with it was years ago when my sister Jana was nine months pregnant and ready for my little niece to make her appearance. In our efforts to see if there was something she could do or eat to help move the labor along, we read about eggplant parmesan, and the suggestion that it could help induce labor. So we thought, why not? Sounded better than drinking castor oil…

Sweet Potato Black Bean Veggie Burger

August 19, 2013. Probably not a significant day to most, but for me it marks my very first post.
I’ve poured over so many amazing food blogs, drooled over more incredible recipes than I can count and admired the writing and photography skills of these countless bloggers. So many of these women have inspiring stories, transformations, whole diet make-overs or expanded food and health knowledge to offer to the world. I don’t know that I have any of that. But I have a love for food, a passion for the way it affects our bodies, and a longing to be apart of this online community…
