Turmeric Ginger Banana Muffins | Lemons and Basil

I’m so excited to share these Turmeric Ginger Banana Muffins with you today! Inspired by one of my top-viewed recipes on the site, this Turmeric Banana Smoothie, these muffins are a delicious way to boost your immune system while fueling your body with healthy, whole foods!

Before I dive in and share all the details of these new-found favorite muffins, let’s talk life. This week marks a fairly big life-moment for me. As I type out these words, Josh and I are relaxing in a hotel room in New York City. Without the kids.

This is our first time to travel without the little ones. My first time away from both of them overnight, and our first time leaving them in the loving care of someone else. Papa and Gigi (Josh’s parents) drove in Sunday to stay for the week and keep them, so Josh and I could take this short trip. Just the two of us, to celebrate his completion of his masters degree and my birthday.

So many emotions. This time together, a break, is so needed. But my babies, leaving them was hard. Releasing control, trusting they’d be well cared for and protected. All hard. Do I trust Papa and Gigi? Completely! They love them deeply and have so been looking forward to this time with them, just as Brighton and Addie counted down the days until their arrival.

The past couple days have been so good! Do I miss my babies? YES!

But this time with Josh, we needed this! Aside from the occasional date night, we haven’t had this sort of time together in over 4 years! Time to just stroll hand in hand. Time and energy for intentional conversation. And the chance to enjoy good food without the rush or angst of trying to feed little ones.

We had tickets to a jazz club Monday night, which was amazing! The level of talent was insane. It was pure enjoyment, sharing a pear and almond cobbler, sipping coffee, and soaking in the music.

And last night, we saw Hamilton at Richard Rodgers Theater. Oh my, where to start. It was everything we had read/heard and more! Someone recommended we listen to the soundtrack and learn the music before going, which we did and definitely added to the experience. But the creativity, the cleverness, the immense talent of the cast, by far the best musical I’ve ever seen!

We fly back home today, and I’m feeling so thankful for this time, for the leisure, the rest, and the fun. And so ready to snuggle my kiddos!

Okay, enough about New York – let’s talk about these muffins. These Turmeric Ginger Banana Muffins are made with oat flour (gluten-free) and have such a lovely texture. A little different from traditional banana muffins, I added a dose of ground cinnamon, turmeric, and ginger. So good! The spice is a bit reminiscent of my favorite Fall flavors, but the turmeric paired with the ginger and banana flavors make it totally Spring appropriate.

Plus with all the crud that’s been going around, we need ALL the immune boosting foods, right?!

Turmeric Ginger Banana Muffins (GF + DF)

These Turmeric Ginger Banana Muffins are a delicious way to boost your immune system while fueling your body with healthy, whole foods!

Ingredients

  • 1 3/4 cup oat flour*
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp turmeric
  • 1 cup ripe mashed banana
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil melted and slightly cooled
  • 1/2 cup almond milk
  • 1 tsp vanilla
  • 2 organic eggs
  • 3/4 cup rolled oats
  • Garnish with additional coconut sugar and rolled oats

Instructions

  • Preheat oven to 350 degrees, and spray muffin tin with nonstick coconut oil or avocado spray.
  • In a medium mixing bowl, add all dry ingredients and whisk together - oat flour, baking powder, baking soda, salt, cinnamon, turmeric and ginger.
  • In a separate large bowl, add all wet ingredients - melted coconut oil, mashed banana, coconut sugar, almond milk, vanilla and eggs, whisk until well combined.
  • Add dry ingredients to wet ingredients and stir them together until just mixed. Fold in rilled oats.
  • Divide into 12 grease muffin, approximately 1/4 cup batter in each. Garnish with extra rolled oats and coconut sugar if desired, then bake 17-18 minutes or until toothpick inserted comes out clean. Enjoy!

Notes

Oat flour: add rolled oats to Nutribullet or high power smoothie maker and blend until fine flour-like consistency.
