Happy Friday! I don’t know about you, but I couldn’t be more thrilled to see the weekend arrive! Wednesday marked my 29th birthday and the start of my final year in my twenties. There’s definitely a bit of “Eek, I’m almost 30!”, but my twenties have been a beautiful time of growing in my marriage with my husband the past 7 years, building my career, and traveling to amazing places. And with the huge blessing of our first baby due to arrive in late summer, there is so very much to look forward to. I cannot wait to see what my thirties bring, but I hope to really treasure this next year, and the last several months with my husband as just the two of us, before our lives are forever changed.
On another note, the weather is FINALLY warming up here in Middle Tennessee, and I am so thankful! The promise of Spring is in the air giving us hope that we’ve seen the last of the snow and ice. The forecast is calling for 70 and sunshine on Sunday and I intend to make sure and soak up a little of that vitamin D! But with the warmer temperatures just around the corner, I realized I’ve waited way too long to share this wonderful soup with you!
Typically I find inspiration for my recipes from the left over food items in my fridge and pantry, other food bloggers, or my favorite restaurant dishes. But there are times when I come across a recipe and have no desire to alter it, and that’s exactly what happened with this Spiced Lentil Soup with Roasted Beets & Delicata Squash. I’ve followed Katie with Produce on Parade for a while now and absolutely love her beautiful photographs and delightful recipes. She posted this lovely soup last November and at the time, I just happened to have nearly all ingredients on hand and loved the idea of eating on soup for several nights.
I had high hopes for this veggie and lentil loaded soup and was thrilled with its hardiness, autumn spices, and faint creamy coconut flavor. If you’re looking for a tasty soup as the cooler temperatures begin to fade {hopefully}, I strongly recommend giving this one a try!
