Seven Saint Patrick’s Day Recipes

I simply cannot let March 17th come and go without sharing seven Saint Patrick’s Day recipes that feature an array of greens threaded throughout some of my favorite, albeit experimental recipes. So today, I decided to don my shamrock green  in anticipation of the upcoming holiday while hoping the Luck of the Irish comes my way!

As a natural red-head, surely I have some Irish in me, right?! And while I’ve been told that red-heads are in danger of becoming extinct {is that really possible?!?!}, I am not alone in my “carrot top” as I was so affectionately called as a kid. But rather my sister, dad, aunt and grandmother share in this Irish attribute. So regardless of how far back the Irish blood goes, I think its safe to say it’s there.

And although Saint Patrick’s Day is a day of feasting, that doesn’t mean we can’t feast on healthy dishes! However, I do realize while this list includes a smoothie, salad, quesadilla, a couple of tasty sides dishes and even pizza…it is sorely lacking one key thing. Something sweet.

But anyone who knows me well, knows I will not let a day of celebration go by without taking advantage of the chance to indulge in something sweet. I mean my birthday was Tuesday and I’ve justified eating cake, ice cream, brownies and dark chocolate Cadbury eggs all week, because it’s my birthweek. That’s right, not day, WEEK.

So it’s safe to say that I won’t leave you empty-handed without a tasty, and yes, green sweet to try. However, you will have to wait until Monday! Yikes, I’m really putting the pressure on. In truth, I haven’t made this recipe yet, but I have all sorts of ideas for it in my head, let’s hope it turns out!
