I’m sure food-blogger coaches or growth strategists would say I’m suppose to talk about these Raw Lemon Poppy Seed Bites, preferably in the first paragraph of my text…using keywords to help the recipe pull up better in search engines. No doubt, I should tell you about their cookie dough texture and how the natural sweetness from the honey contrasts perfectly the slight tartness from the lemon zest. Then go on and share how the oats bulk them up while the cashew meal adds a lovely, sweet nuttiness to each little bite. And of course those coaches or growth strategists would be correct, and luckily these little Raw Lemon Poppy Seed Bites ARE all of those things! BUT…all I really want to talk about is that we closed on our house Tuesday, scrubbed it top to bottom the following two nights, and will be moving everything in first thing tomorrow morning!
To say I’m excited and looking forward to this would be a gigantic understatement. We have been living with our incredibly gracious friends for a little over seven weeks, and while I truly couldn’t imagine the time have gone better than it did…we are definitely ready to be in a home and to get settled in. And I’m sure they are ready to have their house back!

I’ve shared some about my mom (here and here) through the last several months and the battle we’ve fought with her rapidly digressing health. The situation is as heartbreaking as it’s ever been and while we are not giving up hope, and still believe with all of our hearts that the Lord can and may choose to heal her at any moment, the process has been extremely difficult to walk through. {Final update here}
Between sharing weekends with my sister at my parents, trying to work with various homeopaths/doctors to find help for Mom, selling the house, having the rental fall through, searching for a new home (that was a roller coaster in itself), managing a full load at work, and striving to continue to do the blog – having a place to call home again, a place that’s our own oasis, seems to be not only what my heart is craving, but something we desperately need.
The “new” house was built in 1968, and is in a beautiful neighborhood about 15-20 minutes from downtown Nashville. We are extremely blessed to have been able to purchase this home and have so many hopes and dreams of what the next phase of life holds. This is a home we see ourselves being in for years, hopefully with sweet little ones running around one day. The house is essentially move-in ready, but there are many things we want to update and re-do over the years. Some things we hope to do right away, and others we’ll tackle over time. Regardless, there is so much potential, both indoors and out.
I’ll share more pictures down the road, once we get moved in. The weekend ahead holds a lot of work, but I don’t mind a bit!

Raw Lemon Poppy Seed Bites
Ingredients
- RAW DOUGH:
- Juice of one lemon
- zest from one lemon
- 12 dates
- 1 cup cashew meal
- 1 cup oats
- 1 tsp vanilla
- 1/4 cup honey
- 1/4 cup flaxseed
- 1 tsp poppy seed
- 2 tbsp hemp seeds
- COATING:
- 1/3 cup cashew meal
- 1 tsp poppy seeds
Instructions
- Add first ten ingredients to food processor and blend until well combined.
- Line baking sheet with wax paper, then roll dough into small bite size balls (approx 24-28).
- Add 1/3 cup cashew meal to small plate and roll each bite (should be somewhat sticky) into cashew meal to coat, then top with extra poppy seeds.
- Put in freezer for 30-60 minutes, then eat!
- Store in refrigerator or freezer (according to your preference) for up to one week.

Hi Alyssa, sorry for the delay – we were on vacation last week (our Babymoon!) and I made an effort to not check email too much! Cashew Meal is wonderful! Trader Joe’s calls it cashew meal, much like their Almond Meal, but it is essentially ground up cashews in a flour or meal-like consistency and can be used for baking. If you don’t have a Trader Joe’s near you, Whole Foods will likely have it, or you can research cashew flour on Amazon. Hope this helps! :)
