I’m sure most of you have your meal all planned out, but if you’re looking for a festive salad to add to the feast, consider this Pomegranate Christmas Salad!

Pomegranate-Christmas-saladI love the colors of this salad, perfect for any holiday dinner get-together. Tomatoes are no longer in season, hence mine are looking a little pale, but that’s the beauty of a salad, no recipe is needed, just throw in the things you love.

Pomegranate-Christmas-salad4And to make it festive, walk the produce aisle at your local grocery store and pick up any red and green vegetables that tickle your fancy (yes, I just said that) and toss them in!

Pomegranate-Christmas-salad3Pomegranate-Christmas-salad5I think it’s fair to say that the typical Christmas dinner is full of warm rolls, rich casseroles, and goodies galore, let’s lighten things up by adding a clean and pretty salad to the table.

Avocado would be a wonderful addition to this salad, as would candy coated pecans, yum! Suddenly I am taking this salad in the opposite direction and wanting to top it with sugared nuts, I think I seriously need to go on a sugar detox! The sweets have piled up at our office as our thoughtful vendors and clients continue to send yummy Christmas gifts. Clearly I still have sugar on the brain!

But, as long as I have internet I’ll do my best to stay in touch and I’ve prepared a few blogs to post in my absence.

Pomegranate Christmas Salad

Perfect Christmas salad, filled with pomegranate, tomatoes, red bell pepper and feta cheese!

Ingredients

  • 5-6 cups baby spinach
  • 3-4 vine ripe tomatoes chopped
  • 1 red bell pepper chopped
  • 1/3 cup pomegranate seeds
  • 1/4 cup feta cheese
  • Dressing of choice

Instructions

  • Wash and chop tomatoes and bell peppers.
  • Add baby spinach to large bowl.
  • Top with tomatoes, bell peppers, pomegranate seeds and feta, then toss.
  • Serve with dressing of choice!

Notes

Avocado and candied pecans would also be great toppings!
Nutrition info will vary based upon your choice dressing and ingredients.
