This Paleo Mango Avocado Salsa makes for a fresh, addicting appetizer for this Labor Day ’s Spread! Bold in flavor and color, it’s sure to hit the spot!
It’s hard to believe Labor Day is nearly here. I can’t help but feel like time is both flying and crawling by. When I stop to think how long we’ve been in this current season we find ourselves in, with so many unsettling things happening in our world, it sometimes feels like it’s never going to end. And yet, simultaneously it feels hard to believe that so much of the year has passed by and September is already upon us.
My kiddos are both starting preschool this week and I’ve got so many feelings going into it. Honestly, I think it’s going to be a really good thing. For them and me. This is Brighton’s third year at this preschool, which thankfully brings a lot of comfort and familiarity. I think they’ll both love being with other kids on a regular basis again. And I think it’ll help to have other adults giving them instruction/direction besides just my husband and myself.
I also feel like it’ll be a really good thing for me…
Like many of you, I’ve had a LOT of togetherness with my little ones this year. Honestly, with my husband, too. He’s been working from home since this all started, and I think we could all benefit from a little time a part here and there throughout the week. Don’t get me wrong, I love them all dearly and count it a huge blessing to be healthy and together. But for those other stay-at-home mamas out there with preschool age kiddos, I think we can all relate and agree that a somewhat consistent break here and there would be a good a thing for all! 🧡
Anyway, with preschool starting, and life as it is, we don’t have a whole lot planned for this Labor Day. But as with all things this year, we’re still making the effort to do something special as a family and with close friends. Something to give the kiddos a sense of normalcy. And because food is so often the center of our gatherings, we’re planning on a spread of easy appetizers and finger foods. Including this Paleo Mango Avocado Salsa, which is seriously addicting!
Why I love this Paleo Mango Avocado Salsa:
- Mango + Avocado + super delicious!
- Super simple and quick to make
- Bright and colorful
- Paleo, Vegan, Gluten-Free
- Allergy friendly and sure to be a crown pleaser
Mango is one of those fruits I don’t have a whole lot of history with. But every time I eat it, I ask myself why I don’t eat it more often!? It’s tender and sweet with a tropical flavor unlike anything else. And it blends beautifully with the avocado, whose green and butter-like texture enhances the taste. I kept this mango salsa super simple, adding only a little red onion, cilantro and lime juice, with salt and pepper. I wanted the mango to shine and it does so in such a lovely way.
For the chips, I picked up a bag of Paleo tortilla chips with a hint of lime. Which made for a really great complement to the lime flavor found in the salsa. My kiddos helped me make this salsa, and I was blown away by how much my five year old ate of it, my husband, too. I would have said it was more up my alley than either of theirs, but I apparently I was way off. They both went back for seconds, then thirds!
It’s no secret my favorite grocery spot in Franklin is Sprouts. So naturally I picked up all my ingredients there! They offer an incredible variety of produce including these sweet, juicy mangoes. If you’re like me and haven’t done much with mangoes in the past, let me highly recommend you make a quick trip to Sprouts, grab these ingredients and give this Paleo Mango Avocado Salsa a try!
