Cookies for breakfast? ⇦ Uhhh…Yes please!
I love that breakfast cookies are a real thing. Seriously, Pinterest “breakfast cookie” and see how many recipes pop up. Just like when it comes to oatmeal and the endless varieties of flavors and toppings, the same is true for breakfast cookies.
And I mean really, is there anyone who doesn’t want a cookie first thing in the morning?? I for one, give two thumbs up for healthy cookies at any point in the day. These are tasty baked treats are full of organic rolled oats, pecan meal, a healthy dose of cinnamon, a little honey + coconut sugar, and freshly grated apples, all for under 160 calories. Which means it’s totally okay to eat more than one, right?
The star of these Healthy Cinnamon Apple & Oat Breakfast Cookies are most definitely the Rave apples I used from Stemilt Growers. If you haven’t had the privilege of eating one of these Rave apples, the closest comparison I can make is similar to a Honeycrisp or Pink Lady. They’re sweet, crisp, and juicy with the perfect amount of tartness. Seriously, so good!
Now, for a little more conversation on these Cinnamon Apple Breakfast cookie, they’re sort of a cross between a delicious bowl of oatmeal, a muffin, and a cookie. A slightly crisp texture, yet still moist and full of flavor. And if you want to take them to the next level, bringing them from a breakfast cookie to more of a dessert cookie, drizzle them with a little homemade caramel sauce. Because, let’s be real, Fall is here and apples + caramel = all-is right-in-the-world. Okay, perhaps an exaggeration, but isn’t everything this time of year better with a little caramel sauce?
Healthy Cinnamon Apple & Oat Breakfast Cookies
Ingredients
- 3 cups organic rolled oats gluten free certified if necessary
- 3/4 cups pecan meal
- 1 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/8 teaspoon sea salt
- 1/2 cup cinnamon applesauce
- 1/4 cup coconut sugar
- 1/4 cup local honey
- 1/2 cup organic skim milk or milk of choice
- 1 organic egg
- 1 cup peeled and grated RAVE apple *see directions below
- homemade caramel sauce {optional}
Instructions
- Preheat oven to 350 degrees.
- Line baking sheet with a non-stick silicone mat or parchment paper.
- Add rolled oats, pecan meal, baking powder, ground cinnamon, and sea salt to a large bowl, stir to combine.
- In separate bowl, combine applesauce, coconut sugar, honey, milk, and egg, whisk until well combined.
- Once you've grated apples, remove all liquid by squeezing with a clean paper towel - do this BEFORE measuring. Add grated apples to wet ingredients and stir again to combine.
- Combine wet ingredients with dry ingredients, and gently mix together.
- Use a 1/4 cup measuring cup to scoop the cookie mixture onto the baking sheet. I used the bottom side of measuring cup to gently flatten each cookie.
- Bake cookies for 18-20 minutes or until cooked through and golden brown.
- For a sweeter cookie, allow to cool and drizzle with homemade caramel sauce.
- Store in and airtight container for 3-5 days.
