I love to bake and need little to no encouragement to find a reason to make something sweet. But with the holiday season just ahead, I love that these Flourless Chocolate Peanut Butter and Oat Bars are on the healthier side. I figure before I dive head first into all the pumpkin whoopie pies, peanut butter balls, thumbprints, and sugar cookies, for now I can satisfy my chocolate craving with wholesome ingredients!

Flourless Chocolate Peanut Butter and Oat Bars

These Flourless Chocolate Peanut Butter and Oat Bars are sure to satisfy that chocolate craving, while being made with wholesome ingredients!

Ingredients

  • 1/2 cup creamy organic peanut butter
  • 1/2 cup PBfit + 6 tbsp water {mixed}
  • 1/2 cup + 2 tbsp coconut palm sugar
  • 1/2 tsp baking soda
  • 1/8 tsp sea salt
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/3 cup organic rolled oats

Instructions

  • Preheat oven to 350 degrees.
  • Spray 8x8 baking dish with coconut oil cooking spray.
  • Add peanut butter, PBfit + water mixture, coconut palm sugar, baking soda and sea salt to large bowl, mix until well combined.
  • Stir in egg and vanilla, then mix until just combined.
  • Add in chocolate chips and organic rolled oats, and stir.
  • Add to prepared baking dish, and bake 18-20 minutes or until golden brown on top.

Notes

I've had a few leave comments that they had to bake for 30-35 minutes when using Truvia in place of the sugar - you may have to bake longer than my suggested 18-20 minutes. I tend to like my baked goods to be a little undercooked so they remain gooey and don't chance drying out :)

  1. Hmmm; I think you’re missing an ingredient – perhaps chocolate? My brownies do not look like that and I meticulously followed your recipe. They barely covered the bottom of an 8 x 8 pan and they look “blonde.”

    1. Hi Liz! How did they turn out after baking? I double checked the recipe and I didn’t leave out anything that I used, they are definitely more of a blond/peanut butter color rather than a chocolate color, and they aren’t super thick so maybe everything was correct? I’d love to hear if they turned out okay after baking, racking my brain to think of what might have made them different!

        1. I’m so sorry to hear that, Liz! I made them again this evening to check my recipe to see if perhaps I needed to modify it – they filled the pan and baked up just like they did when I photographed them for this post. They are oat bars rather than brownies, being that there is no flour or butter, but I’d compare the texture to a rich, dense muffin, definitely gooey while warm.

  2. Made these tonight. Love the healthier sweets options. Just the right sweetness in these oat bars and the fact that they are gluten free is a bonus for those of us that need it.

  3. Thanks for the great recipe. I’ve been Gluten Free since 7/17…..and love finding recipes. I also have to go sugar free, I hope Stevia works in this, gonna do it. “If it has Chocolate in it, I’m there”…lol

    2. Its 2pm ;here in Middle tennessee…I made these awesome “Flourless Chocolate, peanut butter Squares…” we love them..the only problem I had was it took almost 40 minutes to bake..but soooo good…my hubby loves them also. Thanks again for this recipe….it will be one of my repeats..

    3. I made this sooo good. However it took 35 minutes to bake…we all love it…I used Truvia onstead of sugar..Yum

      1. I’m so glad to hear you liked it, yay!!! And thrilled to hear the Truvia worked well! 🙌🏻 I wonder if that changed the baking time? However I know ovens can have slight variances and some run hotter than other, I also like mine really gooey and moist, so that might account for why some are needing to bake it longer – I’ll make a comment in the notes for others that they may need to bake it longer. :) Thanks so much for taking the time to leave a comment!!

Kaylee, mine were very moist and chewey….at 35 minutes…maybe the Truvia made the difference?/but I have no choice, my hubby is borderline Diabetic and me Gluten free…..at 18 to 20 minutes the bars were not even trying to raise..so I stayed with them and kept making sure I didn’t over bake them..we all loved them…thanks again.
