This post is short and sweet – Josh and I are doing our best to get to bed early so we can get up at 3:30AM and make our way to the airport. We are going to Vermont for the weekend to celebrate his 30th birthday {which isn’t actually until November} and I am so very, very excited. We visited Vermont last year during this time, and truly fell in love. I’m pretty sure I was born to live in Vermont…anyway, I cannot wait to get back next week and share with you pictures of the beautiful Fall foliage, among other things from our little trip! But for tonight, I leave you with this delightful Dark Chocolate Berry Beet Smoothie recipe, along with an update on my Mom, and ask for your prayers for her and my family!

Dark Chocolate Berry Beet Smoothie

This Dark Chocolate Berry Beet Smoothie is a delightful treat - rich in color and loaded with fiber!

Ingredients

  • 1 frozen banana cut into 1" chunks
  • 1 cup almond milk
  • 1/2 cup frozen mixed berries cherries, blackberries, raspberries
  • 1/2 cup peeled and chopped beets
  • 1 tbsp chia seeds plus more for garnish
  • 2 tbsp dark chocolate chunks plus more for garnish
  • 2-3 packets stevia substitute with honey or sweetener of choice

Instructions

  • Add all items to NutriBullet or Blender and blend for 20-30 seconds or until all ingredients are well blended and a smooth consistency.
  • Garnish with additional chocolate chunks and chia seeds.

    I stumbled over because it was about time I checked out the Nashville sites. I was smitten with seeing that you put chocolate in your beet smoothie. I’m intrigued and I must try this. My beet smoothie is my number 2 all time post getting thousands of hits a month and now maybe I’ll give them option number 2. Chocolate! I have always wanted to go to Vermont in the Fall! It sounds romantic.

      Hi Angela, thank you so much for stopping by and especially for taking the time to comment! It sounds like your beet smoothie is a huge hit, I’ll have to check it out! As for the chocolate, I’m a fan of finding as many ways as possible to justify eating it! :)
