Clean Eating Cabbage Soup – Great Detox

Cabbage-Detox-Soup15I don’t know about you, but Sunday night’s Super Bowl felt like there was a whole lot of build up for a whole lot of nothing… except maybe embarrassment. I mean really, 43-8?? I had such high hopes for you, Denver.

And the commercials? Maybe I just didn’t pay attention as closely as I should have, but the only commercial I remember really liking was the Puppy Love commercial with the Clydesdale horse and the cute puppy. So sweet!

Cabbage-Detox-Soup11So essentially, the only thing that seemed worth all the hoop-lah Sunday evening was A.) my company {love!}, and B.) the Bruno Mars half-time show. Honestly the best half-time show I can remember in a long time.

And then of course there was all the yummy food we had. TOO much food. Or maybe there wasn’t too much food, just too much of me piling it in my mouth.

The food wasn’t unhealthy by any means, but my moderation (or lack thereof) might have been just a tad out of control.

Cabbage-Detox-Soup4Which leads to this soup. This Clean Eating Cabbage Soup is the perfect thing to get me back in check after a weekend, which may or may not have trickled over to Monday, of mindlessly eating and snacking on sweets and savory alike.

Cabbage-Detox-Soup2This soup was inspired by some of my co-workers who did a cabbage soup detox earlier this year. You can check out that recipe here! It is a seven-day diet full of daily cabbage soup with a strict regimen of veggies one day, fruits another, a combination of both the next and so on.

Cabbage-Detox-Soup7I happened to have a couple heads of cabbage in the fridge I needed to use up, so I started with their cabbage soup recipe for inspiration, then added in whatever I had on hand or thought would blend well with the cabbage. In the end, I was really happy with the way it turned out! To be a vegetable and bean filled soup, I love that it still felt hearty!

Cabbage-Detox-Soup8Cabbage-Detox-Soup10Cabbage wouldn’t necessarily by my “go-to” vegetable, but I really enjoyed it in this soup and the cayenne pepper, lemon and cinnamon all have wonderful detoxify properties.

The cinnamon may seem like an odd thing to throw in, but it was really quite lovely mixed with the kick of the cayenne and the spice of the chili pepper. It’s added touch of sweetness really brought out the flavor of the sweet potatoes and cabbage.

Cabbage-Detox-Soup16And of course, nothing goes better with a hot bowl of soup than a toasted grilled cheese. This soup is pretty low in calories, so the sandwich was great for Josh, it made the meal a bit more filling and added a little extra protein with the cheese.

Cabbage-Detox-Soup21As with any soup recipe, use what you have on hand. I threw in the turnips because I had them and needed to use them up. No biggie if you wish to leave them out!

If you are looking for a way to boost your New Year’s resolution and get the cleaning eating back on track, give this soup a try! And since it sounds like the little groundhog says we’re having another 6 weeks of winter, you might as well have a warm bowl of soup to help with the chill!

Clean Eating Cabbage Soup

This Cabbage Detox Soup is loaded with all sorts of veggies, black beans and lots of yummy seasonings!

Ingredients

  • 2 medium sweet onions diced
  • 2 large green bell peppers chopped
  • 2 garlic cloves minced
  • 1/2 head red cabbage chopped (approx 3 cups)
  • 1/2 head cabbage chopped (approx 3 cups)
  • 4 carrots peeled and chopped
  • 2 large sweet potatoes peeled and cubed
  • 3 turnips peeled and cubed
  • 2 cups vegetable broth
  • 1/3 cup water
  • 1 tbsp fresh lemon juice
  • 1 15 oz can fire roasted diced tomatoes
  • 1 15 oz can diced tomatoes low sodium
  • 1 can black beans rinsed and drained
  • 2 tbsp chili powder
  • 2 tsp cumin
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic pepper
  • 1/2 tsp cinnamon
  • Suggested Topping: Aged Cheddar Cheese

Instructions

  • Add diced onions, chopped peppers, and minced garlic to large pot, spray with coconut oil cooking spray and cook on medium heat for approximately 5-7 minutes.
  • Add chopped cabbage (both colors) to onion and peppers, stir to combine well and cook 4-5 minutes.
  • Add sweet potatoes and carrots and cook another 3-4 minutes.
  • Then add turnips, vegetable broth, tomatoes, black beans and all seasonings and cook for another 5 minutes.
  • Turn burner down to low and allow soup to simmer 20-30 minutes or until all vegetables are cooked to your preference and flavor has blended.

Nutrition info is for 2 cups of soup, recipe makes approx 16 cups.

    This looks like something I would love…healthy, filling, and delicious! I actually have a head of cabbage in my fridge right now that would be perfect for this.

      Hmmm… that’s a tough one, the aged cheddar really adds a nice flavor, feta is often salty so it could be a good addition as well! I’d probably lean towards something that would melt or become creamy in the warm soup, but the choice is totally up to you! I’d love to hear what you end up adding and how it worked!         This was delicious!!!!!!!!!!!!! I loved it and made a huge pot, plus I’m a nurse with 3 jobs and I’m always offered muffins, cakes, chow mein, soda, and coffee galore, which is sweet, but now I can just dish up some of this in a Tupperware and call it a day and still feel like I’m giving my body joy… my roommate loved it too. I added mushrooms (cause I had em), a red bell pepper (cause I only had one green), a white onion (didn’t have sweet ones), more cayenne and garlic (cause I live for the kick in meals) and I didn’t have vegetable broth, so I used my low sodium chicken broth, oh I also used kidney beans (cause I didn’t have black beans)…. this was awesome! I also used feta cheese and it gave it that extra component of more salt that I wanted. Very satisfying. Thank you so much for sharing this recipe! The cinnamon? BRILLIANT addition! I normally am not healthy. I love top ramen. But I’ve felt so sluggish that my roommate and I decided to try clean eating for a month. Its really about a having an idea of what works for you and buying non-processed foods and making meals. Plus prepping can actually be cathartic with a good show. I feel sooooo much better and its only Day 6. Forget counting days, this will be my new habit within the home. Thanks again. I’ll probably try a new recipe a week. I’ll keep you posted totally…(sorry if this was too long, got happy).

    This is in my crock pot right now. Smells great, but doesn’t seem like enough liquid for it to be a “soup.” If I add more broth do you think I should I add more of all spices, lemon juice, etc. as well?

      Hi Jean – thrilled to hear your trying this soup! It is definitely a hearty soup, with more chunky vegetables, rather than a lot of broth/juice. As the veggies cook down, they’ll release their water and juice, adding to the liquid. However, I think you could add a cup or two of broth without needing much more spice, if you add more than that, I’d probably up the spices a bit, specifically the chili and cumin. I hope that helps! :)

    This soup is so good! My husband and I love it. I eat it lunch and dinner all week then feel free to eat out on the weekend then . I added parsnips too. Great sweetness there. The black beans and spices are perfect. This is much tastier than the old cabbage soup diet but lots more calories. Still I feel great, have lots of energy and am losing some weight. Win win as far as I can see.

    are the ‘cans’ of tomatoes 15oz or 28oz? it really makes a big difference but you leave no clue. this sounds good and i’d like to make it soon but HELP. thanks for a delicious looking ‘feel good’ soup, marti
