Sometimes an easy mistake turns into a tasty solution! A while back, my sister and I threw a surprise retirement party for my dad, and spinach cheese balls were on the menu. We each took that Friday off from work and enjoyed the day together, shopping for decorations and the food, then prepping for our family to arrive in town.
As we shopped up and down the aisles of Kroger, laughing, talking a little too loud, and looking for each item on our never-ending list, we made our way to the frozen vegetables and grabbed what we thought was chopped spinach. We threw it in the cart and were on to the next thing. Once we were home, family had arrived, and dinner was eaten, we started making and prepping food for the party the following day.
I got started on the spinach cheese balls, only to discover we grabbed chopped broccoli rather than chopped spinach…oops! I made a quick trip to Publix, we made the spinach balls {which were delish}, and the party turned out wonderful, but the frozen broccoli has sat in my freezer since then. So a few weeks ago, as I rummaged through my pantry and fridge to see what I had, I came across that frozen chopped broccoli and came up with the idea to make these Broccoli Cheese Sweet Potatoes with Fried Egg. And I must say, I’ve never been so glad to have grabbed the wrong thing at the store!
These Broccoli Cheese Sweet Potatoes topped with a Fried Egg are not only loaded with nutrients, but make for the perfect comfort meal. Sweet Potatoes loaded with creamy broccoli and cheese, seasoned with chopped onions, then topped with a fried runny egg and a little smoked paprika…I think I could eat this for breakfast, lunch, and dinner, all in the same day!
Not the prettiest, but quite tasty, enjoy!
Broccoli Cheese Loaded Sweet Potatoes with Fried Egg
Ingredients
- 4 sweet potatoes
- 3 cups chopped broccoli
- 3 slices aged cheddar cheese light, chopped
- 1/4 cup shredded triple cheddar cheese blend
- 1/2 cup almond milk
- 1 onion chopped
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/4 tsp garlic powder
- 4 eggs
- smoked paprika
Instructions
- Preheat oven to 375, wash sweet potatoes, prick with fork and bake for 30 minutes, then flip and bake another 30 minutes.
- Once potatoes have cooked about halfway, add chopped onions to sauce pan and cook over medium heat until onions begin to brown. Add in chopped broccoli, almond milk, chopped aged cheddar, triple shredded cheddar, salt, pepper and onion powder.
- Cook on low for 10-15 minutes, stirring continuously until cheese is melted and mixture thickens, lower to simmer and let sit until potatoes are ready.
- Cook eggs two at time on low heat, until eggs are medium done.
- Once potatoes have cooked, cut skin off of top, use a fork to cut up the cooked flesh, top each with 1/4 broccoli mixture, one over easy egg, additional shredded cheese, salt, pepper and smoked paprika (if desired), then serve!
