Yes, I do realize it’s the weekend after Thanksgiving. And no, I haven’t forgotten that most of us likely ate way too much turkey, dressing, sweet potato casserole, and pumpkin pie. So why, you might ask, am I posting a cookie recipe when we should probably all be focusing on upping our salad and veggie intake for the next few days in an effort to detox after all that hearty food??
Because these cookies, are loaded with black beans, peanut butter and dark chocolate. So there’s your fiber, protein and antioxidants, right? Sounds like detoxing to me!
Okay, so maybe they aren’t exactly on the plan for a detox, but if you’re looking for a yummy cookie with some additional health benefits, let it be these Black Bean Peanut Butter Fudgy Cookies!
They are grain and flour free and have no refined sugar!
The black bean fad has been around for a while, and probably many of you have already tried them in some sort of brownie or cookie, and if you have then you know that you CANNOT taste the black beans.
My favorite thing about these cookies is that there are only seven ingredients in them and they can be made in half an hour! So when you’re craving something sweet, don’t reach for the ice cream in the freezer, but instead check your pantry to see if you have what’s needed to whip up a quick batch of these tasty treats!
I sent some of these to work with Josh and took the rest RHI, even those who aren’t overly fond of healthy food, seemed to have no problem getting these down!
The peanut butter and black beans create a fudgy, brownie-like texture, while the honey and dark chocolate chips bring in the perfect sweetness.
So being the sweet lover that I am, my plan is to load up on salads and veggies this week, then eat a few of these here and there when that sweet craving takes over!

Black Bean Fudgy Cookies
Ingredients
- 1 15-ounce can black beans, rinsed and drained
- 2 tablespoons cocoa powder
- 1 tablespoon vanilla
- 2/3 cup peanut butter
- 1/3 cup honey
- 1 teaspoon baking powder
- 1 cup dark chocolate chips
Instructions
- Preheat oven to 350°.
- Combine black beans, cocoa powder, vanilla, peanut butter, honey and baking powder in the container of a food processor. Process mixture until very smooth. Transfer mixture to a bowl and stir in dark chocolate chips.
- Roll dough into 2-inch balls and place on parchment-lined baking sheet. Press slightly to flatten. Bake at 350° for 12 minutes. Yield: 16 cookies.

The batter was a thick liquid, not a dough that could be formed into balls. I greased a 9×9″ baking dish, poured the batter in, and baked at 350 for 40 minutes. The bars were moist and fudgy, with a mild chocolatty peanut butter flavor. I used mini-chocolate chips, which melted to be part of the fudginess.

Hi Chris, I’m sorry the batter wasn’t thicker, I keep going over the recipe trying to figure out why it was a thinner batter than mine. The beans were rinsed and drained, right? Was the honey or peanut butter thinner than typical? I’m so glad you thought to make them as bars, I’ll have to try them that was as well! :)
