I thought I’d be a little patriotic and share this Berry and Pecan Spring Mix Salad loaded with blueberries, raspberries and topped with a bit of goat cheese. Nothing like adding a little red, white and blue to our plates, to help remind us what this day is all about and the gift so many have given us in fighting for our country and our freedom. To those of you serving in our Armed Forces, or have loved ones who serve or have served, thank you from the bottom of my heart for your selflessness, bravery, and sacrifice!

I am a huge proponent of hearty salads year round, but the endless amount of fresh produce available during the Summer, all the more energizes me for a huge bowl of dark leafy greens topped with any and all veggies and fruits. Not to mention, homemade dressings are so much more appealing, even enchanting, during the Summer. The idea of mixing up my own vinaigrette with fresh berries, balsamic vinegar and a variety of other odds and ends seems like a delectable treat in the Summer, whereas it somehow feels more laborious in the Winter. Odd how my mind changes with the seasons.

This particular salad is loaded with blueberries and raspberries then topped with a bit of goat cheese, pecans and deli turkey for some added protein and sustenance. For the dressing, I drizzled it in my Blueberry Pecan Balsamic Vinaigrette which can be made in a matter of minutes and contains fresh berries, roasted walnut oil, red apple balsamic vinegar, maple syrup and feta cheese among other things. It compliments this fruit-filled salad perfectly!

Health Benefits of Blueberries, Raspberries and Pecans:

  • Blueberries are high in antioxidants, neutralize free radicals which can affect disease and again, promotes urinary tract health, and improves brain and heart health.
  • Raspberries contain high levels of assorted vitamins and minerals, including potassium, calcium, and carotinoids. They also help fight inflammatory conditions,such as arthritis and gout, and are high in antioxidants, which help fight aging and can slow cancer growth.
  • Pecans are an excellent source of protein, while adding fiber, iron, calcium and vitamins A, B, and C to diet. They can also help lower cholesterol, increase heart health, and help with weight control.

If you’re breaking out the grill this Memorial Day weekend, this salad would be great with some grilled chicken in place of the deli turkey. Happy Cooking {or grilling}! :)

Ingredients

  • 2-4 cups romaine spring mix
  • 2-4 cups spinach
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 1/4 cup pecan halves
  • 1/2 cup chickpeas {garbanzo beans}
  • 1/2 avocado cubed
  • 4 slices deli turkey chopped {hormone & antibiotic free}
  • 2 oz goat cheese
  • Blueberry Pecan Balsamic Vinaigrette

Instructions

  • Layer all ingredients in large bowls or plates, dividing the items evenly
  • Drizzle with Blueberry Pecan Balsamic Vinaigrette or dressing of choice!
