- RAW DOUGH:
- Juice of one lemon
- zest from one lemon
- 12 dates
- 1 cup cashew meal
- 1 cup oats
- 1 tsp vanilla
- 1/4 cup honey
- 1/4 cup flaxseed
- 1 tsp poppy seed
- 2 tbsp hemp seeds
- COATING:
- 1/3 cup cashew meal
- 1 tsp poppy seeds
Add first ten ingredients to food processor and blend until well combined.
Line baking sheet with wax paper, then roll dough into small bite size balls (approx 24-28).
Add 1/3 cup cashew meal to small plate and roll each bite (should be somewhat sticky) into cashew meal to coat, then top with extra poppy seeds.
Put in freezer for 30-60 minutes, then eat!
Store in refrigerator or freezer (according to your preference) for up to one week.
