Strawberry Banana Cheesecake Popsicles | Lemons and Basil

Pale pink Strawberry Banana Cheesecake Popsicles for a sweet baby girl! We found out this past Monday that Brighton will soon have a baby sister, Adelaide Grace, and we could not be more excited! From the beginning both Josh and I felt it was a little girl. My first trimester was harder than it was with Brighton and there just seemed to be enough differences that I couldn’t help but think we’d be having a girl. Of course I know many woman have differences in their pregnancies and have the same gender, but this was just a gut feeling. We had that same feeling with Brighton, we were so sure we were having a boy, and we did!

It’s hard to believe our precious little guy had surgery less than two weeks ago. He is doing remarkably well and aside from the incision on his lower abdomen, there’s hardly any signs left that he even had the surgery. His appetite and energy levels are completely back to normal, and those sweet smiles and joyous giggles continuously pour out of him. Such a blessing to have it behind us and to see him doing so well!

If the look on Brighton’s face is any indication, I’d say these Strawberry Banana Cheesecake Popsicles are clearly a winner with him. Does that sweet face not just look so happy?? Booger and all! These frozen treats are the perfect size for littles ones, yet not to small to be enjoyed by us adults as well. Best of all, they’re made with simple ingredients and take all of 10 minutes to whip up.

While they do have a great creaminess to them, they still have that delightful ice-y texture we all know and love about popsicles. You can adjust the amount of maple syrup used based on your desired sweetness. As for the creamer, I quite often buy the Simple Truth Organic Coffee Creamer from Kroger, loving it’s simple, organic ingredients. It seemed like a natural fit for these creamy pops, but you could easily substitute with organic half n half and an extra tablespoon of maple syrup.

We reached the 90’s yesterday, things are warming up quickly, these are such a fun, refreshing snack to have ready in the freezer. I hope you enjoy them as much as we have!

Strawberry Banana Cheesecake Popsicles + It's a Baby Girl!

These Strawberry Banana Cheesecake Popsicles are a great healthy treat to beat the summer heat! And the little ones will love them, too!

Ingredients

  • 1 cup strawberries chopped, divided
  • 1 frozen banana
  • 4 oz cream cheese softened {I used 1/3 less fat}
  • 2 tbsp organic maple syrup
  • 1/4 cup organic whole milk
  • 1/4 cup organic sweet cream coffee creamer* {I used Kroger's simple truth}
  • 1 tsp lemon juice

Instructions

  • Add 3/4 cup chopped strawberries to bowl of food processor, followed by frozen banana, softened cream cheese, organic maple syrup, organic milk, organic coffee creamer, and lemon juice.
  • Process for 5-10 seconds or until a smooth consistency is reached.
  • Stir in the remaining 1/4 cup chopped strawberries.
  • Evenly distribute strawberry banana cheesecake mix into six popsicle molds, add to freezer for 6-8 hours or until fully frozen. See notes for a tip on removing popsicles.**

Notes

*Sweet Cream coffee creamer can be replaced with 1/4 cup half n half, then add additional maple syrup. I'd start with 1 extra tablespoon maple syrup, then check flavor for sweetness.
**Each popsicle mold is different, but for these, I run each popsicle under warm-hot water for about 20-30 seconds and then gentle remove.
