Seven Vegetarian Recipes for Cinco de Mayo!

The sun is shining, the weather is warm and I think {fingers-crossed} Spring is FINALLY here to stay! And with the warm weather comes the joy of eating outside! Whether it’s picnics in the park or backyard gatherings, there’s something special about eating outdoors. The promise that summer, and perhaps a slower pace, is on its way.

While I’m totally in favor of serving up Mexican food all year long, it’s especially fun {and practically a requirement} for Cinco de Mayo. Whether you’re in the mood for tacos, enchiladas, or nachos, these are some of my favorite Mexican-inspired recipes.
