Vegan Pumpkin Spice Latte Smoothie

This Vegan Pumpkin Spice Latte Smoothie is so easy I almost didn’t post it. It’s the easy things I throw together with little to no thought that feel not at all “blog-worthy”. But in truth, it’s those simple easy things that I actually eat on repeat and really enjoy. So, having made this pumpkin cake (which is AMAZING) for two different gatherings over the last month, I continued to find myself with left over pumpkin puree in my fridge.

Smoothies have been a quick and easy go-to for me over the last few months. With things as busy as they’ve been, smoothies have become my nutrition in a cup most mornings. An easy way to get in some fruits, veggies and protein in a form that can be carried out the door or eaten while doing something else.

This Vegan Pumpkin Spice Latte Smoothie has been a favorite this Fall. It’s dairy-free and vegan and comes together in about 5 minutes – assuming you’ve got coffee already made. I’ve also made it without the coffee several times and enjoy it that way just as much. If coffee isn’t your thing, you can easily substitute more of the almond milk in place of the coffee. If you want a bolder coffee flavor, try it with a dark roast coffee! Here’s  list of best dark roast coffee you may find helpful!

AND, because the combination of pumpkin and chocolate is a favorite of mine, I’ve made it with this Dark Chocolate Organic Plant-Based Protein powder a couple times and it is quickly becoming a favorite! Whenever using the chocolate protein powder, I skip the cold coffee and just use all almond milk. Looking to have this as a dessert? Add a handful of chocolate chips – so good!  😋

Equipment

  • Blender

Ingredients

  • 3/4 cup unsweetened vanilla almond milk or milk of choice
  • 1 frozen banana
  • 1/3-1/2 cup pumpkin puree
  • 1/4 cup cold black coffee *optional, see notes
  • 2-3 tbsp protein powder of choice
  • 1 tbsp ground flaxseed
  • 1 tsp ground cinnamon
  • 1/2 tsp pumpkin pie spice
  • 2-3 packets stevia or sweetener of choice
  • handful of ice

Instructions

  • Add all ingredients to high power blender, blend until smooth.
  • Top with a sprinkle of cinnamon if desired, enjoy!

Notes

*You can easily leave out the coffee and use 1/4 more of the almond milk or milk of choice.
