Peanut Butter Banana and Berry Green Smoothie | Lemons and Basil

This Peanut Butter Banana and Berry Green Smoothie has been my go-to breakfast for the bulk of this pregnancy. With Brighton, I only experienced mild nauseousness in my first trimester and then had pretty bad heartburn set in around the start of my third trimester. However, with Adelaide {our soon to arrive sweet baby girl}, I was much more nauseous my first trimester, then heartburn set in with a vengeance around 16 weeks and has been my ever-present companion. It seems heartburn is way more common in pregnancy than I realized. Anyway, with the nauseousness and heartburn, some of my previous go-to’s just haven’t set well on the stomach nor sounded at all appetizing. And coffee would be at the top of that list.

I wanted to find a breakfast that I felt gave me a healthy dose of nutrition, a little pep in my step, and yet something my stomach could manage. There are still days that nothing really sounds good in the morning, but for the most part, this smoothie does the trick!

For a while there, my daily lunch salads weren’t so daily. Nothing about them sounded good and if/when I forced myself to eat one, it typically ended with regret. Which made this green smoothie all the better. I love getting my greens in at the start of the day, then any additional spinach or greens I eat are bonus. Thankfully, I’m enjoying salads again {at least for the moment}, but because I enjoy these smoothies so much, I think they’re here to stay!

The PBfit, banana, blueberries and stevia do a lovely job masking any spinach flavor. I’ve found that I prefer straight spinach in this smoothie as opposed to a spring mix blend of any sort. The spinach tends to be less bitter and the flavor is essentially nonexistent. In short, it’s both healthy and tasty – win win!

Speaking of pregnancy, we’re officially at 32 weeks with just 8 more weeks to go! Brighton fills our lives with so much unending joy and love, I truly cannot wait to have another little one add to that joy! 💕🙌

Peanut Butter Banana and Berry Green Smoothie

This Peanut Butter Banana and Berry Green Smoothie makes a great start to your day, loaded with flaxseed, blueberries, and spinach, it's both healthy AND tasty!

Ingredients

  • 1 cup unsweetened vanilla almond milk
  • 6-7 ice cubes
  • 1/2 frozen banana
  • 1/2 cup frozen blueberries
  • 2 tbsp ground flaxseed
  • 2 tbsp PBfit
  • 3 packets stevia {or sweetener of choice}
  • 2-3 cups organic spinach
  • Garnish: Additional blueberries and hemp seeds {optional}

Instructions

  • Add all ingredients to blender or Ninja smoothie attachment, blend on high for 40-60 seconds.
  • Garnish with additional blueberries and hemp seeds, if desired.

Notes

I use the smoothie attachment for our Ninja blender and add all other ingredients before the spinach, then jam in as much spinach will fit, which ends up being 2-3 cups.
If you use more than 2 cups spinach, you may want to add 2-3 tbsp water if it gets thicker than you like, or you can eat it with a spoon! :)
