Hiiii! Happy New Year!!!

Seeing as it’s January 9th, I think it’s safe to say I was rather successful in my attempt to unplug over Christmas and New Years.😂

We alternate holidays every year between our families and this year we were with my family for Christmas. We celebrated Christmas Eve with them and Christmas day was just the four of us here at home.

It was so special to celebrate Addie’s first Christmas and such fun to make a big deal of Santa with Brighton. I’m not sure he really gets the whole thing, but we thoroughly enjoyed it just the same. Of course while Santa is fun, all season long we talked about the story of Baby Jesus, sharing with him that we give to others  because we were given the greatest gift of all. When we asked him what he was going to ask Santa for, he responded with “baby Jesus”, needless to say our hearts melted!

We spent New Year’s in Michigan with my Dad’s side of the family, all 25 of us were able to make it this year, which is pretty incredible in itself. But what’s even more incredible is that my grandma, at 92, is still able to host us all! My aunt is a huge help as well, but she’s truly an amazing women who lives to feed and serve others.

To keep the festivities going, Josh and I celebrated our tenth wedding anniversary this past Friday. TEN years! We had a wonderful dinner at Cork & Cow here in Franklin, with great conversation reflecting on the past, recognizing how we’ve grown, and setting goals for the future. I’m so thankful for this man I call my husband.

Sugar-Free Chocolate Peanut Butter Lara Bar

These Sugar-Free Chocolate Peanut Butter Lara Bars contain only 5 ingredients and provide a great source of energy!

Ingredients

  • 14 Medjool dates pitted
  • 1/2 cup raw cashews + 2 tbsp {divided}
  • 1/4 cup roasted unsalted peanuts
  • 1/4 cup natural unsweetened cocoa powder
  • 2 tbsp organic peanut butter

Instructions

  • Add all ingredients {with exception of 2 tbsp cashews} to bowl of food processor, blend for one minute - scrap down sides if needed and blend for additional 20 seconds.
  • Line 8x8 square dish with plastic wrap, remove mixture from food processor bowl and smooth into even layer. The mixture will be thick - I found washing my hands, them getting them slightly wet and using them to press down and spread the mixture out was the easiest. Then use a slightly damp spatula to create a smooth finish.
  • Chop remaining 2 tbsp cashews, then sprinkle across the bars. Place another piece of plastic wrap over the bars and press the cashew pieces down into the bars.
  • Refrigerate 15-20 minutes, then remove plastic and bars from 8x8 pan and cut into 12 even bars. Store in airtight container in refrigerator for up to one week.
