Flourless Chocolate Peanut Butter and Oat Bars

Ingredients

  • 1/2 cup creamy organic peanut butter
  • 1/2 cup PBfit + 6 tbsp water {mixed}
  • 1/2 cup + 2 tbsp coconut palm sugar
  • 1/2 tsp baking soda
  • 1/8 tsp sea salt
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/3 cup organic rolled oats

Instructions

  • Preheat oven to 350 degrees.
  • Spray 8x8 baking dish with coconut oil cooking spray.
  • Add peanut butter, PBfit + water mixture, coconut palm sugar, baking soda and sea salt to large bowl, mix until well combined.
  • Stir in egg and vanilla, then mix until just combined.
  • Add in chocolate chips and organic rolled oats, and stir.
  • Add to prepared baking dish, and bake 18-20 minutes or until golden brown on top.

Notes

I've had a few leave comments that they had to bake for 30-35 minutes when using Truvia in place of the sugar - you may have to bake longer than my suggested 18-20 minutes. I tend to like my baked goods to be a little undercooked so they remain gooey and don't chance drying out :)
