Roasted Beet Chips + Remembering My Mom

These Roasted Beet Chips are a great healthy snack and a breeze to make!

  • 4 small beets scrubbed
  • coconut oil cooking spray or melted coconut oil
  • sea salt


  • Preheat oven to 400 degrees.
  • Thinly slice beets to approx 1/16th inch, getting them as consistently thin as possible.
  • Add sliced beets to medium bowl, spray with coconut oil {or drizzle with melted coconut oil} and toss to coat. Spray baking sheet with another light layer of coconut oil cooking spray, then arrange in a single layer.
  • Bake for 15-20 minutes or until crispy and slightly brown. Watch closely once you get to the 15 minute mark as they can burn quickly!
  • Let cool and serve.
