In posting this recipe, I couldn’t help but look back at how many pizza recipes I’ve posted in the last four years since beginning Lemons and Basil. There are nearly 10 pizza recipes that can be found on the site. I think it’s safe to say I have a deep affection for pizza. And this Gluten-Free Three Cheese Sun-dried Tomato Pizza with Pesto just might be one of my favorites. Inspired by Mellow Mushroom’s Kosmic Karma pizza, it starts with a homemade red sauce base with fresh mozzarella, sun-dried tomatoes, spinach, and Roma tomatoes, then topped with a fresh homemade basil pesto swirl and feta cheese. So many intense flavors working together to create pure goodness!

And best of all, thanks to Sprouts great assortment of gluten-free products, this pizza is not only gluten-free, but a breeze to make, and without sacrificing flavor OR texture. Can we all say, yes please and thank you! Thankfully neither Josh, Brighton, nor myself suffer from Celiac disease or any gluten intolerance, but Josh’s sister does along with some close friends. It’s such a relief to have so many great gluten-free options available that make traditional favorites easy to make!

I love experimenting with various gluten-free flours and working to create recipes from scratch, but let’s be real, it doesn’t always turn out exactly as I hoped the first time. And when it comes to cooking for company, my main goal is to make sure the results are a success! Schar has most certainly figured out the perfect recipe to give this gluten-free crust a great texture and consistency!

Gluten-Free Three Cheese Sun-dried Tomato Pizza with Pesto

This Gluten-Free Three Cheese Sun-dried Tomato Pizza with Pesto is a healthy remake of my favorite Mellow Mushroom Pizza, the Kosmic Karma, it's loaded with veggies and full of flavor!

Ingredients

  • For the Pizza:
  • 2 Schar gluten free crusts
  • 1/3-1/2 cup homemade pizza sauce {recipe below}
  • 1/4 cup sun-dried tomatoes sliced
  • 1/2 cup fresh spinach loosely packed
  • 4-5 ounces fresh mozzarella cheese thinly sliced
  • 1 roma tomato thinly sliced
  • 1/3 cup feta cheese {approx 1 1/2 ounces}
  • 1/2 cup homemade pesto {recipe below}
  • Homemade Pizza Sauce: {this makes more than you’ll need}
  • 1 15 ounce can tomato sauce, no salt added
  • 1 6 ounce can tomato paste
  • 1 garlic clove minced
  • 1 tbsp Parsley
  • 1 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 1 tsp coconut sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Homemade Pesto:
  • 1 cup packed basil
  • 1 cup packed spinach
  • ¼ cup pecans
  • ½ cup freshly grated Parmesan cheese {approx 1 ounce}
  • 1-2 garlic cloves
  • 2 tsp fresh lemon juice
  • ½ teaspoon salt
  • ¼ tsp black pepper
  • 1 tbsp coconut oil melted
  • 1/2 small avocado
  • 3 tbsp water

Instructions

  • Preheat oven to 410 degrees.
  • While oven heats, add all ingredients for pizza sauce to medium bowl, stir together, taste and tweak seasonings according to your preferences.
  • Then add all ingredients for homemade pesto to bowl of food processor, process 10-20 seconds or until smooth consistency is reached.
  • To assemble pizzas, add homemade pizza sauce to both crusts, followed by single layer of fresh spinach and sliced sun-dried tomatoes, then top with fresh mozzarella cheese, and finally layer Roma tomatoes.
  • Bake for 10 minutes, remove from oven, drizzle with pesto, sprinkle with feta cheese and bake additional 2 minutes.
