Recipe type: Dessert
Serves: 16
  • ½ cup creamy organic peanut butter
  • ½ cup PBfit + 6 tbsp water {mixed}
  • ½ cup + 2 tbsp coconut palm sugar
  • ½ tsp baking soda
  • ⅛ tsp sea salt
  • 1 large egg
  • 1½ tsp vanilla extract
  • ½ cup dark chocolate chips
  • ⅓ cup organic rolled oats
  1. Preheat oven to 350 degrees.
  2. Spray 8x8 baking dish with coconut oil cooking spray.
  3. Add peanut butter, PBfit + water mixture, coconut palm sugar, baking soda and sea salt to large bowl, mix until well combined.
  4. Stir in egg and vanilla, then mix until just combined.
  5. Add in chocolate chips and organic rolled oats, and stir.
  6. Add to prepared baking dish, and bake 18-20 minutes or until golden brown on top.
I've had a few leave comments that they had to bake for 30-35 minutes when using Truvia in place of the sugar - you may have to bake longer than my suggested 18-20 minutes. I tend to like my baked goods to be a little undercooked so they remain gooey and don't chance drying out :)
